I am super excited that I do not have to take my glucose test prior to Christmas, although just in case I do have gestational diabetes (or may get it in the near future ... family history) I am trying to be good and cook some meals that don't contain too many carbs...
... And I like lighter meals for summer anyway.
This recipe is quick and easy and super fresh. There is minimal cooking involved and you can get it on the table in 15 minutes ( a la Shari style, not Jamie Oliver 'trick TV' style).
VEAL WITH BUFFALO MOZZARELLA SALAD
4 veal schnitzels (un-crumbed)
2 bunches of green asparagus
4 medium spring onions
1 bunch of chives
1 lemon
1 ball of buffalo mozzarella
1 tablespoon of seeded mustard
1 tablespoon of honey
1 tablespoon of white wine vinegar
salt and pepper
Heat a non-stick frying pan to medium and cook the schnitzels for 2 minutes before turning over. Season with salt, pepper and a squeeze of lemon juice and then cook through.
Using a vegetable peeler, shred the asparagus. Add the asparagus into a bowl with the shredded spring onions and batons of chives - season with lemon juice, salt and pepper.
In a small bowl, whisk together the mustard, honey and white wine vinegar.
To serve arrange the veal (2 pieces per person) on the plate with the salad next to it. Top with two slices of mozzarella and then drizzle over the mustard dressing.
