OMG talk about HOT … so it appears that for the last few years we haven’t been having our typical Australian summers, but as soon as I am 6 months pregnant it decided to ramp up and go all out. Well thank you Mr Global Warming! (I’m choosing to personify Global Warming as a male, as Mother Nature would never be as mean as this.)

This week is all about simple dishes that don’t take too much time (as I can’t stand for that long in the kitchen as my feet are swollen by the end of the day – yay, I know, I’m looking forward to 3 more months of this), require short amounts of cooking (because who wants to keep the oven on for a long period of time whilst it counteracts your air-conditioning) and again don’t require too much washing up (because I hate washing up – pregnant or not pregnant).

MONDAY
Baked Salmon with hummus and snow peas

TUESDAY
Veal with buffalo mozzarella salad

Haloumi, chickpea and chorizo salad

THURSDAY
Dukkah-crusted chicken with lemon hummus (to use up any of that leftover hommus from Monday night)

FRIDAY
My work Christmas party – we will be heading out to Gryphons Caffe Bar at Griffith Shops.

I haven’t headed out there before and I am a little worried that it only has a 65% liking on ‘Urbanspoon’. Although I did take in that most of the disappointed reviews were from people ordering breakfast – so I am hoping that they do a mean dinner … as I won’t be sampling their drinks selection.

I don’t care if you eat a whole pack of paddle-pops for dinner, if that’s what you feel like today – go right ahead!
