Chicken Spicy Roast - Guest Post

oshlo.blogspot.com - We woke up to a dark, drizzling morning, very wet and supposed to be raining. Of course it started raining in the evening and went through the whole night. The weather was unbelievably cool and refreshing. I spent some quality time, just getting drenched in the soft drizzle that was on. Moments such as those makes one so nostalgic and longing for something intangible. The feeling so quaint. so poignant of time lost, spent sleeping. I wished I woke up earlier than this for the rains.
Even before getting out of the bed, I got a call confirming that the schools were declared holiday because of the rains. So I made sure I didn't wake up anybody and went on with my usual morning chores. Whatever happens, I have my work to attend. I went on with the breakfast and lunch preparation. Then it was time to leave. The journey through the drizzling rains, was wonderful. I was remembering those many rides in my bike and badly wanted to experience again.
Anyway the whole day went in slow motion. It hardly rained after the morning. A school day wasted and more portions to cover now. Well we still have some more months to cover and I am hoping the syllabus would be done on time.
Chicken Spicy Roast

When I was leaving for home, I saw the weather was still very chill and I suddenly felt it would be wonderful if I get to eat some hot dosas. I hardly remember those carefree days when this was a reality. Now it was just a passing memory. Yet I was happy that I have such beautiful memories to think back. It suddenly struck me that if I was to be treated to a hot dosas, I will have to go to parents home or visit my sil.
When I said this to Amma, she should I should come down for some dosas as she had coconut chutney. I couldn't miss out such temptations. And yes just like old days I had hot dosas right in the kitchen. I remember this eating in the kitchen happened only after marriage. Before that Amma would never let such things. It had to be always on the dining table. I guess leaving the nest gives you such privileges.
With the content soul I got back to my work. Then it was like anyother evening. With making dinner, feeding the kids and yes wanted to do this post. Though I thought I would do it later, didn't want to miss out the thoughts I have been having.
The chicken roast for day's post is what I made yesterday for Konda. She wanted something very spicy as she felt we end up making the dish not so spicy for her taste. So it was with special care, I made sure this was spicy.
She loved it very much and said I should be making this often. This might be just like another roast, though I didn't want to forget how I made it.

Chicken Spicy Roast

Ingredients Needed:

For the pressure cooking

Chicken - 1/2 kg
Ginger Garlic paste - 1 tsp
Turmeric powder a pinch
Salt to taste
Red chili powder - 1/2 tsp
Green chilies - 1 long
Tomato - 1 medium

For the roast

Oil - 1 tsp
Onions - 1 medium
Red chili powder - 1/2 tsp
Pepper powder - 1/2 tsp
Green Chili - 1 medium
Roasted Coriander powder - 1 /2 tsp
Garam Masala a pinch
Ghee - 1 tsp
Coriander leaves for garnish.

How to make the Roast
In a pressure cooker, take the chicken along with all the ingredients listed under the first list. No need to add water. The water in the chicken will be enough to cook the chicken.
Cook for 2 -3 whistles. Switch off and let the pressure fall down.
For the Roast
Heat a non stick pan with oil, add chopped onions. Saute till the onions turn colour.
Now add the cooked chicken along with the water. Cook on high so that the water dries up.
When the chicken is almost dry, add all the spice powders. Combine everything together, continue cooking till you find the outer layer turning brown.
Finally add the ghee, this will aid the chicken browning faster. Once you find the chicken roasted well, garnish with finely chopped coriander leaves.
Serve with Rice or Roti.
